Just a quick update:
I lost another 1.5 lbs, and am officially (and barely!) back in the 170's, at 179.5!
Whoo hooo!
I lost 12 pounds this past month.
Lots of sweat and determination.
Since this new year is my year of challenges, I'm going to start cooking more and make my family try new recipes, and hopefully they won't know the difference when I make them lower in fat.
I made this today, and tested it out on my father-in-law and Finn.
We all loved it.
A low-fat version of lettuce wraps.
4 WW pts. per serving, and the recipe makes about 5 servings.
Thai Lettuce Wraps
2/3 lb of Jennie-O lean Ground Turkey
5 oz. cooked shrimp, cubed
1/2 cup Kikkoman lower sodiumTerraiki Sauce
1 medium zucchini, diced
1 cup carrots, diced
1/2 cup water chestnuts, diced
Juice from 1 lime
Black pepper to taste
1 tsp olive oil
1 head iceburg (or other) lettuce, Bibb works well, too
Mix first 7 ingredients in a bowl. Heat a non-stick skillet over medium high heat. Add the tsp of oil. Add the meat and vegetable mixture. Cook until meat is thouroughly browned. Add black pepper to taste.
Serve in lettuce cups.
